Gluten free muffins


• 1 cup rice flour.
• 1/2 cup potato starch.
• 1/4 cup tapioca starch.
• 1 teaspoon xanthan gum.
• 1/2 teaspoon baking powder.
• 1/2 teaspoon sodium bicarbonate.
• 1/2 teaspoon cinnamon.
• 1/2 teaspoon salt.
• 2 eggs.
• 1 cup brown sugar.
• 1/2 cup canola oil.
• 1 teaspoon vanilla extract.
• 1/2 cup grated pear (1 pear with no liquids).
• 1/4 cup diced sugared ginger.

1.Preheat the oven to 350 degrees, and slightly oil the cupcake holders.
2.In a medium bowl mix the flours, xanthan, baking powder, sodium bicarbonate, cinnamon and salt.
3.In another bowl mix the oil, sugar and vanilla extract.Add the eggs one by one.
4.Add the grated pear (Don’t forget to squeeze out the liquids) to the second bowel and slightly mix. Add the content of the first bowl to this one, plus the ginger.
5.Use a spoon to fill the baking cups with the mixture. Bake for 25-30 min.
6.Enjoy !
